One in 13 children in the U.S. are reported to have a food allergy. The rate of ED visits for food allergy-related anaphylaxis from 2005 to 2014 increased 214% in children ages 0 to 17 years. Despite the risk of severe allergic reactions and even death, no treatment exists for food allergies other than avoiding the allergen and treating the symptoms of a reaction. It is important for parents, caregivers, and clinicians to be educated about the topic of food allergy. The goal of this course is to provide nursing professionals with information about the prevalence, symptoms, diagnosis, and treatment of food allergies in children.

After taking this course, you should be able to:

  • Describe five effects of histamine release during an allergic response.
  • Discuss at least three symptoms and treatment interventions for anaphylaxis.
  • Examine parent education for key elements of an action plan for children with food allergies.
  • Describe five effects of histamine release during an allergic response
  • Evaluate a patient for the four cardinal signs of anaphylaxis
  • Provide parent education on six key elements of an action plan for children with food allergies
